They don't also have to offer a choice of lower Resolution - they could use CB rendering and construct a 4k image - technically the game is running at a lower resolution but using some pixels from the previous frame to construct a 4k image. There are several games that offer 4k/60 on a PS4 Pro so its not a 'stretch' to offer 120fps on a PS5. The advantages of higher frame rates are not 'just' visual, but because the game is running at 120fps, its more responsive, has lower input lag because its processing your inputs much faster and more often. It maybe possible to run the game at 120fps and get the benefits that offers - even if the TV can only display 60 frames per second - just drop the frames it can't display. If you have a HDMI2.0 TV, you may have to drop the output resolution down to 1440p or even 1080p to get 120fps (if your TV can accept it). You may also need to go to the settings to reduce the resolution output and then let your 4k TV handle the upscaling rather than the console upscale to 4k and then send that to your TV. Whether the game runs at 1080p or native 4k is not necessarily important - its what the console outputs. You will need a HDMI2.1 enabled TV to receive a 4k/120 image. Its worth checking to see what your TV can actually receive (resolution and frame rate) and accurately display. A lot of TV's won't accept more than HD at 120Hz - and some will say they offer 120hz (or more) but that's just their image processing and interpolating to create a 'smoother' look - but cannot accept more than 60fps so it can be confusing.
